Beans and equipment

Choose freshly roasted beans Ideally within 2-4 weeks of the roast date.

Weigh out beans using a coffee scale

Grind the beans fresh just before brewing

Set the grind size for your brew method

Clean your brewing equipment and filter
Water

Use filtered water for best taste

Heat water to about 92-96°C

Let just-boiled water rest for 30 seconds before pouring

Warm the cup or brewer with hot water first

Measure the coffee-to-water ratio About 1:15 to 1:17 for pour-over.
Brewing

Rinse the paper filter to remove papery taste

Add the ground coffee to the filter or brewer

Bloom the coffee with a small amount of water for 30-45 seconds

Pour the remaining water in slow, controlled circles

Time the total brew, aiming for 2:30-4:00 minutes
Serving and cleanup

Swirl or stir the brew gently before serving

Taste and note adjustments for the next cup

Pour into a warmed cup

Clean the grinder of leftover grounds

Store remaining beans in an airtight container away from light
